Football Season Party Dip Recipe

Football season is upon us here in Kansas City and with that, comes the need to know some new recipes to wow your fellow tailgaters. You don’t want to take that same tired dish that you bring every time. Food is meant to be enjoyed…not to be a reputation!  Max, from our iFamily Mom & Dad Squad shares one of his favs with us!

Football Season Party Dip Recipe

Just like the pros use the pre-season to work out the kinks and see what will work, I use the pre-season tailgates to test out some new recipes. My wife and I enjoy taking our girls to the Chiefs pre-season games because they are a bit more low-key, but we get to start the indoctrination process early.

Pre-season brings some unique difficulties to the tailgating process. First, these games are typically on weeknights meaning that most people that are at the tailgate not only have to work the next day but they also likely just came from work as well. This makes it more difficult to have an impressive spread and means that someone else will inevitably swing through their local Hy-Vee to get some roll-ups and a couple bags of chips. While this is certainly the easier route to take, I’d like to think that there is a compromise to be had between store bought snacks and a full-on BBQ spread.

That compromise comes in the form of DIPS. Who doesn’t love a good dip?! For this pre-season tailgate, I made an Enchilada Dip from our leftover ingredients earlier that week. I was in a bit of a bind because I didn’t have the time to go to the store and we had already promised to bring something to the tailgate. The following is the recipe that I can up with and I highly encourage you to use this more as a guide so that you can change it to your specific preference. Like I said, I used ingredients that I already had on hand to make this.

Football Dip Recipe

-1lb browned hamburger meat

-1cup enchilada sauce

-1cup shredded cheese

-1/2cup rice

-1 can black beans

-3tblspn taco seasoning

-salt and pepper to taste

Directions:

Preheat oven to 350 degrees. Brown and season the meat with taco seasoning, salt, and pepper. You will need to cook your rice while you’re browning the meat. Once both are cooked, simply dump the ingredients into an oven safe bowl. Pop it into the oven until it’s warm. I heated it in the oven at 350 degrees for 15 minutes.  If needed you can turn up the heat if you need it to be done sooner.

This pre-season dish is perfect for the regular season, too, or any other entertaining that you have to o throughout the year. It’s a perfect complement to your homemade guac and salsa for taco night, too!

Fix, Freeze and Feast on Tuesdays!

Last week’s meal prep was Mexican cuisine! I made a quick and inexpensive trip to Aldi’s and loaded up on veggies, chicken, beef, rice and black beans! Prepping for a few Mexican meals is super easy and loved by the entire family! In a short time I was able to prep a few meals including, chicken fajitas, beef fajitas, cilantro lime chicken and extra corn/tomatoes/ black beans and onions for future chicken bowls and burritos.

Here are the yummy recipes that I prepped! For quick organization I made my shopping list of exactly how much of everything I needed. All the recipes are similar, it’s easy to shop quickly and convenient to prep extra.

Cilantro Lime Chicken

1 ½ pounds boneless, skinless chicken breasts

1 (15 ounce) can black beans, drained and rinsed

1 (10 ounce can) mild diced tomatoes and green chilies

1 cup of corn kernels, frozen, canned or roasted

½ cup salsa, homemade or store-bought

½ cup chopped fresh cilantro leaves

1 red diced onion, 1 diced jalapeno,

2 teaspoons cumin, 2 teaspoons chili powder, 4 cloves garlic minced

Juice of 2 limes

Combine all ingredients together to freeze in a gallon-sized freezer bag or add to your slow cooker. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.

Variety of ways to serve this meal! I sometimes make it without adding the cilantro and lime juice. You can shred the chicken or cut into cubes. We eat ours over brown rice for a tasty chicken bowl.

Beef or Chicken Fajitas

2 pounds of boneless beef chuck shoulder roast or boneless chicken breasts

2 red bell peppers, sliced

1 small onion, peeled and sliced

1 tablespoon of honey,

2 cloves of garlic, minced

Juice from 1 lime

1 tablespoon chili powder, 2 teaspoons cumin, 1 teaspoon paprika,

¼ crushed red pepper flakes

Combine all ingredients together to freeze in a gallon-sized freezer bag or add to your slow cooker. Cover.  Cook on low heat for 6-8 hours or high heat for 3-4 hours, beef should shred easily with a fork.

Spice up these meals by topping the ingredients with a bed of lettuce. Add more veggies, shredded cheese, greek yogurt (a healthy version of sour cream) and avocados for a yummy taco salad! Or serve with tortillas and rice!

Nothing says summer like the 4th of July! Fireworks, swimming pools and everything red, white and blue. When I was younger, I always loved a few things about the 4th of July and that’s the picnics and fireworks. Getting together and spending a day eating summer favorites, popping fireworks and fighting your exhaustion from the day just to see the big ones go off at night made it all worth it.

Now that I am older, and have a family and an obsession with Pinterest, I get more excited to host the picnics and get togethers more than anything. Once the fireworks go off at night, I feel like it is the “ta-da” moment of the day lol.

The 4th of July is such an awesome holiday and it can be the highlight of any summer. But I also know that it can become complicated, overwhelming and just downright tiresome. So this year, have no fear! Here are some of my favorite quick and easy 4th of July recipes!

When it’s hot, you don’t really want a whole lot of piping hot food. This red, white and blue salad is so easy, light and perfect for summer!
